Opening Sparkling

OPENING SPARKLING STANDARD OF PROCEDURE BESIDES THE GUESTS TABLE

1. Collect the bottle of sparkling juice :

·         Pick up the sparkling juice bottle from the ice bucket and make sure it is the correct one that has been ordered and that it is at the right temperature.

·         When carrying the bottle of sparkling juice, always have your service napkin with you. Place your service napkin on your left arm by folding it into two. Be careful when carrying the sparkling juice bottle.

2. Present the bottle of sparkling juice:

·         Make sure you have placed the correct wine glasses on the guests table.

·         To present the bottle of sparkling juice, place the service napkin over your left hand, place the bottle of sparkling juice in your left hand holding the neck of the bottle with your right hand, then step to the right side of the guest (host) who ordered the sparkling juice.

·         Present the bottle of sparkling juice with the label facing the guest. At the same time say the name of the sparkling juice.

3. Open the bottle of sparkling juice :

·         Use the corkscrew knife to cut the foil from the top of the bottle either on or under the rim. Do not turn the bottle while cutting.

·         Clean the top of the cork with a service napkin, hold the bottle tight in your left hand, then put your thumb into the middle of the cork. Do not push too hard the cork.

·         Then, shake the bottle a bit so that the gas inside the sparkling juice bottle will push the cork in order to open the sparkling juice bottle.

·         Make sure that there are no noises while the gas inside the sparkling juice bottle pushes the cork outside of the bottle. 

4. Serves the sparkling juice :

·         Take the bottle in your right hand and pour the sparkling juice slowly from the right side of the guest (host’s), into the guest’s (host’s) glass, filling the glass only ¼ full, with the label facing the guest.

·         After the approval of the host, pour the sparkling juice into the other glasses, ladies first, counter clockwise and the host last, then place the bottle back into the ice bucket.

·         Make sure you have placed the correct 4 wine glasses on the side table.

·         To present the bottle of sparkling juice, place the service napkin over your left hand, place the bottle of sparkling juice in your left hand holding the neck of the bottle with your right hand, then show the wine to every guests that wants to see your opening sparkling skills.

·          Present the bottle of sparkling juice with the label facing the guest. At the same time say the name of the sparkling juice.

3. Open the bottle of sparkling juice :

·         Use the corkscrew knife to cut the foil from the top of the bottle either on or under the rim. Do not turn the bottle while cutting.

·         Grasp the neck of the bottle with four fingers of your left hand (if right-handed) and place your thumb over the top of the basket.

·         Twist the retaining wire on the wire cage six half-turns counter-clockwise. The cork may be pushed out by the pressure any time after the basket is loosened, so apply firm pressure with your thumb on the top of the basket. If your wine was adequately chilled, the cork will rarely if ever get pushed out on its own.

·         Clean the top of the cork with a service napkin, hold the bottle tight in your left hand, then put your thumb into the middle of the cork. Do not push too hard the cork.

·         Then, shake the bottle a bit so that the gas inside the sparkling juice bottle will push the cork in order to open the sparkling juice bottle.

4. Serves the sparkling juice :

·         Take the bottle in your right hand and pour the sparkling juice slowly starting from the right side of the wine glass until the left side.  Fill the glass only ¼ full, with the label facing the guest.
